I’m sharing The BEST Low-Carb Recipes for Leftover Turkey (or Chicken) on the day before Thanksgiving, because by tomorrow I’m going to be too busy thinking about holiday houseguests and preparing Thanksgiving dinner to be posting anything here. I have 30+ people coming to my house for Thanksgiving dinner, and believe it or not that’s a relatively small group for my family! But I’m excited that six of my siblings will be at my house this year, some of whom have kids who are going elsewhere for the holiday!
I’m cooking a turkey and making stuffing muffins, and I might make Sweet Potato Gratin, but I don’t think I’ll make much more than that because although I assigned everyone in my family one or two things to bring for dinner, most of them are bringing a lot more than that! It wouldn’t be a Denny family party unless we had three or four times as much food as we needed. And having leftovers will be good because we have other members of the extended family who can’t make it to dinner at my house but they’ll stop by later for turkey sandwiches and pie.
And after I hit publish on this post I’m probably going to take the rest of the week of from the blogs and spend time with my family. I hope everyone else who’s celebrating will have a wonderful Thanksgiving holiday, and if you’re lucky enough to have leftover turkey I hope you enjoy trying some of these recipes.
